  4. It's 1 tsp of cumin.
  5. It's 1 1/2 cup of uncooked rice.
  6. You need 3 cup of chicken stock.
  7. It's 3 of plum tomatoes, chopped.
  8. It's 1 cup of frozen corn.
  9. You need 1 cup of black beans, cooked and drained (I use canned).
  10. You need 1 tbsp of fresh lime juice.
  11. You need 1 of heaping tsp cilantro flakes.
  12. Prepare 1 tbsp of extra virgin olive oil.

  1. Throw the stock, oil, garlic, chili powder, crushed chili flakes, cumin and rice into a rice cooker. A pot on the stove works too, obviously..
  2. Once the rice is done (or almost done if you're doing stove-top), throw in the chopped tomatoes, corn, black beans, cilantro and lime juice, and mix well..
  3. Let everything get nice and warm together, then serve. I often serve it with a nice steak..
